Kinzan ιε±± 7.7β³ Damascus Steel Gyuto Japanese Chef Knife ηε
Introducing the Kinzan ιε±± by Shimeru, a premium 7.7β³ gyuto knife that celebrates the timeless beauty of traditional Japanese craftsmanship. Named after the "Golden Mountain," the Kinzan radiates warmth and refinement, offering exceptional cutting performance in a blade destined to become a treasured kitchen heirloom.
67-Layer Damascus Steel Brilliance The Kinzan's blade is meticulously forged from 67 layers of premium Damascus steel, encasing a VG10 core celebrated for its outstanding sharpness and edge retention. The intricate flowing pattern across the blade surface tells the story of expert forging, while the hammered tsuchime finish reduces friction and prevents food from clinging to the steel. Every cut is precise, effortless, and controlled.
Elegant Rosewood and Amber Handle The handle is a showcase of natural sophistication, crafted from rich, deep-grained rosewood that exudes classic elegance. A luminous amber resin spacer adds a touch of warmth and distinction, complemented by polished steel accents that frame the design beautifully. The octagonal profile provides a secure, comfortable grip, allowing for confident control and reduced hand fatigue during extended culinary sessions.
Agile Precision At 7.7β³, the Kinzan offers a nimble yet capable blade length, perfectly suited for chefs who appreciate agility without sacrificing versatility. From delicate herb chiffonades to swift vegetable prep and precision protein work, the Kinzan responds to every movement with grace and accuracy.

Step 1: Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher; the harsh detergents and jostling will damage the edge and handle.
Step 2: Dry
Towel dry immediately. Don't leave it wet or in the sink; even stainless steel can develop spots if left damp.
Step 3: Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer; it dulls the edge and is a safety hazard.
That's it. No special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use, and with these three steps it'll stay razor-sharp for years.
Every knife comes in its own presentation box, ready to give as a gift.
Got this for my husband who loves cooking and hes been raving about it nonstop. Said the VG10 steel holds an edge way better than his global knives and hes been using it for everything from dicing onions to breaking down whole chickens. It came in a neat little box too which was a nice touch. Only downside is now he wants me to buy him more knives from this brand haha.
Bought this as a birthday present for myself and honestly its the best kitchen purchase Ive made in years. The Damascus pattern is absolutely gorgeous in person, way more detailed than the product photos show. Used it to slice up some tomatoes and it cut through like butter without any effort at all. The handle feels nice and solid in my hand too, not slippery like some others Ive used. Definitely a step up from my old chef's knife.
Really nice knife, cuts great. Only thing is the handle feels a bit small in my hand, took a few days to get used to. Still love using it though, sharp as hell.
Got this cause I wanted a decent gyuto without spending a fortune. It's fine, cuts well enough, but not sure it's worth the price. The blade looks pretty but doesnt feel as premium as I hoped. I'll use it but I'm not blown away.
Great knife, super sharp. I do wish it came in a slightly longer version, maybe a 9 inch. But for the price it's a really good piece.
Bought this for my dad's birthday and he loves it. He's a retired chef and said the craftsmanship is excellent for the price. He uses it all the time.
Its a decent knife. Does the job. The damascus finish looks nice and it was sharp when it arrived. I guess I was just expecting to be more impressed for the price? It's good, but not amazing. It feels a bit lighter than I prefer for a chef's knife, I like a little more heft. It's fine, I'll use it, but I'm not blown away.
It's a good knife. Does the job well. Handle finish is a bit smooth for my liking, I prefer a little more texture. But the steel is quality and it stays sharp.
Positive experience. The knife is beautiful and cuts great. My minor gripe is I wish the edge was a tiny bit thinner behind the edge for even smoother cuts through soft stuff, but that's just me being picky.
The knife feels substantial but not heavy. The pattern on the steel is just wow. Cuts paper thin slices of meat no problem.
Bought this for my husband who's been getting into cooking more. He absolutely loves it. He says the balance is perfect and the VG10 core holds an edge way better than anything we've had. He uses it for everything from slicing tomatoes to chopping herbs. The handle is comfortable and it just feels solid. Great value for the money honestly.
This knife has quickly become my favorite kitchen tool. It handles a variety of tasks with ease, from slicing to dicing, and the edge retention is impressive.
Iβm pleased with the performance of this knife. Itβs sharp, comfortable to hold, and easy to clean.
An excellent knife that delivers professional results.
The balance and weight of this knife are perfect.
Iβve been cooking for years, but this knife has brought a whole new level of precision to my meals. Itβs a joy to use.
This knife feels like an extension of my hand; it's perfectly balanced.
This knife handles every task effortlessly; I love it.
Remarkable quality and performance
This knife has made a noticeable difference in my kitchen. Itβs sharp and well-balanced, making it a reliable tool for any task. The blade is great for everything from slicing to chopping, though I did find that it needs regular honing to stay sharp. The handle is comfortable and provides a good grip, though it could be a bit more ergonomic for better comfort during long cooking sessions. Despite these small issues, itβs a solid knife thatβs become a staple in my kitchen.
This knife is a great addition to my kitchen. Itβs sharp and versatile, handling everything from chopping vegetables to slicing meat. The blade is well-crafted and offers good precision, though it does require regular sharpening to stay in top condition. The handle is comfortable and provides a secure grip, but I think it could be slightly more ergonomic for better comfort during long cooking sessions. Despite these minor drawbacks, itβs a great knife thatβs well worth the investment.
This knife offers great performance and is a beautiful addition to my collection.
A beautiful piece that enhances my cooking experience
The knife cuts well, but the handle feels cheap.
A fantastic knife that combines sharpness with a comfortable grip, making meal prep easier.
