Ok so I got this knife to replace my old block set and wow. The edge is crazy sharp right out of the box, I barely had to touch it up on my honing rod. Used it to break down a whole chicken and it went through the joints like nothing. The balance is perfect for a rocking motion on herbs. My new favorite kitchen tool.
Positive first impressions. The blade is super sharp and it looks great. I've used it on veggies and fish so far and it performs well. I do wish it came in a slightly longer size, like a 9 inch, just for my personal preference. But for an 8 inch gyuto, it's a good knife.
Cuts beautifully. My only wish is that the handle was a darker color, the lighter wood look just isn't my personal preference. Performance-wise, it's spot on.
