Ok so I've had this knife for about a month now and it's just fantastic. The edge is still crazy sharp, I've only had to hone it once. Used it to break down a whole chicken last weekend and it went through the joints like nothing. The handle feels really solid in my hand, not slippery at all. My old Henckels feels like a butter knife now.
So I finally upgraded from my cheap grocery store knives. Cant believe the difference. This thing glides through tomatoes and peppers like they're butter. Worth it.
Really nice knife overall. The VG10 steel is no joke, it stays sharp. I love the look of it. My only thing is the handle shape, it's a little more oval than I'm used to so it took a few days to feel totally natural in my hand. But the cutting performance is top notch, definitely a massive upgrade from my old set.
