Step 1: Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher; the harsh detergents and jostling will damage the edge and handle.
Step 2: Dry
Towel dry immediately. Don't leave it wet or in the sink; even stainless steel can develop spots if left damp.
Step 3: Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer; it dulls the edge and is a safety hazard.
That's it. No special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use, and with these three steps it'll stay razor-sharp for years.

SaleMy wife got me this Ishikari set for our anniversary and honestly these knives are stupid sharp. Ive been using the santoku for everything from dicing onions to slicing beef for stir fry, and the smaller utility knife is perfect for fruit and small jobs. The octagonal handle felt a little weird at first but now I love how secure it feels in my hand. Edge retention has been great so far, 3 weeks in and they still glide through tomatoes like nothing. Way better than the old Henckels block we had. Came in a nice box too which made gift giving easy.
Got this set for myself after reading about the AUS steel. Overall really solid knives, the 5 inch santoku has a nice flat profile for chopping and the set covers most of what I do daily. Only thing is the handle is a bit more angular than I'm used to so my grip took some getting used to. Also wish the chef knife in the set was a little longer, like 7 or 8 inches, cause I do a lot of butternut squash and bigger prep. But for the price its a good set and they hold an edge well.
Solid set overall, really happy with the purchase. The blades hold an edge way longer than my old knives. Only thing is the handles are a bit thicker than I expected, but my wife likes em. I use the santoku the most for slicing tomatoes. Wish they offered a slightly longer version in the set, like a 7 inch, but for $80 its a steal. Would buy again.
These knives are legit sharp out of the box. Got the 5 inch santoku and the other knives in the set, and they make chopping veggies feel effortless. The octagonal handle is comfortable in my hand, took a day to get used to but now I love it. Used the smaller knife for trimming fat and the santoku for dicing onions, no tears cause its so sharp. Great value for a set this price.
So Ive had these Ishikari knives for about 3 weeks now and I'm honestly blown away. The santoku is perfect for dicing onions and vegetables, slicing through tomatoes like butter. But the smaller paring knife in the set is what I use most for fruit and stuff. They come in a real nice box too. For 80 bucks this is a steal compared to the Wusthof set I was eyeing.
Got the whole set for my wife's birthday and shes been using them nonstop for like a month now. The 5 inch santoku is her favorite but the bigger chef knife is what I grab when I'm cooking. Seriously sharp out of the box and they still feel like new. The handles are pretty too I like the wood grain.
They're decent knives. Do the job. I was maybe expecting a bit more for the price? They're fine, just not amazing. The set is complete which is nice.
Bought this set for my husband who loves to cook. He uses a different one every night. His favorite is the smaller one for detail work. They look really classy on the magnetic strip too.
These are alright. I use the santoku mostly, its a good size. The other one doesn't get much use. They're good but not great. Probably wouldn't buy them again, but I'll use them until I upgrade.
Positive overall. The knives perform well, the santoku is a workhorse. I just wish the set came with a pairing knife too, would have made it perfect. Still, I use them all the time.
