Step 1: Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher; the harsh detergents and jostling will damage the edge and handle.
Step 2: Dry
Towel dry immediately. Don't leave it wet or in the sink; even stainless steel can develop spots if left damp.
Step 3: Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer; it dulls the edge and is a safety hazard.
That's it. No special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use, and with these three steps it'll stay razor-sharp for years.
Every knife comes in its own presentation box, ready to give as a gift.

SaleOrdered this because my cheap Farberware knives weren't cutting it anymore. This santoku is a massive upgrade. The AUS10 steel holds an edge way better, and the damascus cladding looks gorgeous. My only small issue is the handle shape - it took a bit of getting used to for my grip, felt a little blocky at first but after a few days it's fine. Overall really happy, especially for $100.
this thing is sharp. got it after my old santoku finally gave up. the damascus pattern is sick and it holds an edge really well. used it for everything from breaking down chickens to chiffonade basil. no complaints
Really like this knife - looks beautiful and cuts great. Only thing is the handle feel a little different than what I'm used to, took me a week to get comfortable with it. But once you adjust it performs awesome. Would def recommend just be aware of the handle shape if you got smaller hands.
Got this for my wife and shes happy with it. Shes been using it for veggies and some light meat cutting. Shes says its sharp and keeps an edge well. I wish it came in a 8 inch version cause she wanted something a bit longer but the 7 works fine for her. Nice knife overall.
Got this for myself as a little birthday treat and man, what a difference from my old Chicago Cutlery set. This thing glides through tomatoes like nothing Iβve ever seen no squishing at all. The flat profile on the santoku makes chopping herbs a breeze too. It came in a real nice box with a little care card which was a nice touch. Only thing is I wish there was a matching pairing knife cause now I want the whole set haha. But yeah, brilliant knife, would buy again.
Iβve been using this santoku for about a month now and itβs honestly the sharpest knife Iβve ever owned right out of the box. The Damascus pattern is really something too, every time I wash it I notice different ripples in the steel. It makes dicing onions and bell peppers feel way too easy. I had a Shun before and this feels just as good if not better for half the price. The handle is comfortable, not too heavy. Really glad I took a chance on this.
So I got this to replace my old block set santoku and wow, its a night and day difference. The edge is crazy sharp out of the box, just glides through onions and tomatoes. I love the look of the dark grain pattern, its way nicer in person. Been using it for a month now and it still feels like new. My favorite knife in the kitchen now.
My new favorite kitchen tool. I've broken down whole chickens with it, sliced fish, chopped herbs. It handles everything I throw at it. Just hand wash it and it stays perfect.
Ok so its sharp and looks nice. I used it to slice up some chicken and veggies, worked fine. I dont know, maybe santokus just arent for me? I think I prefer a chefs knife for the rocking motion. Its not bad, just not my favorite.
Its a decent knife. Does the job, cuts well. I guess I was expecting to be more wowed for the price? The handle feels a bit cheap to me, like its just plastic. Its fine for my home kitchen but I'm not blown away or anything.
Love the performance and the look. It's a bit heavier than I expected for a Japanese style knife, but I got used to it after a few days and now I kinda like the extra weight. Just something to be aware of.
This knife has been a great tool in my kitchen. Itβs sharp, well-balanced, and makes cooking more enjoyable.
Iβm happy with how sharp and well-made this knife is. Itβs been a reliable tool in my kitchen. The blade is precise and handles a variety of tasks with ease, though it does require frequent sharpening to maintain its edge. The handle is well-designed and provides a secure grip, but I think it could be slightly more cushioned for better comfort during extended use. Overall, itβs a reliable knife thatβs worth the investment, even if it does need a bit of upkeep.
The knife is well-balanced and sharp, making it a pleasure to use for all types of cutting tasks.
The knife was delivered in record time, and the quality is exceptional.
Itβs a decent knife, but the handle could be more ergonomic.
This knife performs beautifully. Itβs sharp, sturdy, and the handle is comfortable to hold, even during extended use.
Iβm very satisfied with this knife. Itβs sharp right out of the box and has a nice weight to it, making it easy to control. The blade is precise and cuts through ingredients cleanly, though I noticed it does require regular sharpening to maintain its edge.
