Step 1: Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher; the harsh detergents and jostling will damage the edge and handle.
Step 2: Dry
Towel dry immediately. Don't leave it wet or in the sink; even stainless steel can develop spots if left damp.
Step 3: Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer; it dulls the edge and is a safety hazard.
That's it. No special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use, and with these three steps it'll stay razor-sharp for years.
Every knife comes in its own presentation box, ready to give as a gift.

This knife is insane. I've been cooking with it for about two months now and it's still razor sharp out of the box. I mainly use it for chopping veggies and slicing chicken, and it flys through everything. The handle feels solid and the weight is perfect—not too heavy but you know it's there. My old knife from a cheap set just doesnt compare. Only thing is it's a bit shorter than I expected for a santoku but honestly it's super nimble so I actually like it now.
Really nice knife overall. Super sharp and keeps its edge well after about a month of daily use. My only thing is the handle is a tiny bit thicker than I expected but Ive gotten used to it. Great for dicing onions and slicing chicken. Would buy again if it came in a bigger size but the 7 inch works fine.
Got this knife a couple weeks ago and it's insane how sharp it is right out the box. Cut through sweet potatoes like they were butter, no struggle at all. The handle feels really solid too, like it's not gonna slip when my hands get messy. Definitely a step up from the cheap knives I was using before.
So I’ve been using this knife for about a month now and honestly it’s the best kitchen purchase I’ve made in years. I mostly do a lot of veg prep and it just glides through onions and peppers like butter. The blade’s got a nice weight to it, not too heavy but feels solid. Sharp out of the box too—almost cut myself because I wasn’t used to something this sharp. Only thing is I wish the handle was a little longer for my big hands but honestly that’s a me problem. Great knife for the price.
Got this for my mom as a birthday gift and she loves it. She’s been using it daily for a couple weeks now and says it was a massive upgrade from her old set. The Damascus pattern looks real nice in person too. Only minor thing is it’s a tad heavier than I expected for a santoku, but she actually prefers the heft. Would’ve liked if they offered a 8 inch option but the 7 works fine for her. Overall a good buy.
The knife arrived in a nice sturdy box, which was a nice touch. The blade is beautiful with all those layers. It's my first real Japanese knife and I'm hooked. Cuts so much better than my old grocery store knives.
Brilliant knife. Sharp out of the box, cuts through tomatoes like nothing. The handle is comfortable and the full tang gives it a good heft. Been using it daily for 3 weeks now and it's still perfect. Definitely recommend.
Really nice knife overall. The steel is great, holds an edge, and it looks beautiful. My only very minor thing is the handle shape—it's a little blocky for my hand, took a day or two to get used to. But the performance is fantastic, cuts through everything easily. Still very happy with the purchase.
So I've been using this Hikari santoku for about a month now and it's honestly my favorite knife in the kitchen. The edge is still crazy sharp, I use it for everything from veggies to slicing up chicken breasts. The handle feels solid and the damascus pattern is way prettier in person than in the pictures. For the price I really can't complain, it's a massive upgrade from the cheap set I had before.
Bought this for my husband who loves to cook. He was so impressed with the damascus pattern and how sharp it was right out of the box. He says it's perfectly balanced and makes chopping veggies a breeze.
A fantastic knife that combines sharpness with a comfortable grip, making meal prep easier.
An essential addition to any kitchen arsenal
This knife has made a noticeable difference in my kitchen. It’s sharp and well-balanced, making it a reliable tool for any task.
This knife is a great addition to my kitchen. It’s sharp and versatile, handling everything from chopping vegetables to slicing meat. The blade is well-crafted and offers good precision, though it does require regular sharpening to stay in top condition. The handle is comfortable and provides a secure grip, but I think it could be slightly more ergonomic for better comfort during long cooking sessions. Despite these minor drawbacks, it’s a great knife that’s well worth the investment.
Quick delivery and an outstanding knife. It’s sharp, balanced, and a joy to use.
Super fast shipping and the knife arrived in perfect condition. Sharp and beautifully balanced.
I’m pleased with the performance of this knife. It’s sharp, comfortable to use, and seems built to last. The blade is precise and handles a variety of tasks with ease, though it does require frequent sharpening to maintain its edge. The handle is well-designed and provides a secure grip, but I think it could be slightly more cushioned for better comfort during extended use. Overall, it’s a reliable knife that’s worth the investment, even if it does need a bit of upkeep.
Remarkable quality and performance
The knife’s sharpness and elegant design make it a standout tool in my kitchen.
The knife is fine, but it doesn’t hold its edge well.
A perfect blend of form and function
I’m impressed with the quality of this knife. It’s sharp, easy to handle, and seems like it will last for a long time.

Despite these small issues, it’s a solid knife that’s become a staple in my kitchen.
