Step 1: Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher; the harsh detergents and jostling will damage the edge and handle.
Step 2: Dry
Towel dry immediately. Don't leave it wet or in the sink; even stainless steel can develop spots if left damp.
Step 3: Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer; it dulls the edge and is a safety hazard.
That's it. No special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use, and with these three steps it'll stay razor-sharp for years.
Every knife comes in its own presentation box, ready to give as a gift.
Unmatched Hardness, Surgical Precision
Discover the ultimate in sharpening performance with the Shimeru Diamond Rolling Sharpener, designed for chefs who demand durability, speed, and refined precision. Featuring ultra-hard diamond-coated grinding discs in #400 and #1000 grit, this system tackles even the hardest steels with ease.
Why Diamond?
Diamond abrasives are the hardest sharpening material available. The #400 grit disc is ideal for fast edge restorationβremoving chips, reshaping blades, and reviving dull edges. The finer #1000 grit disc polishes and refines the blade, creating a razor-sharp edge ready for precise slicing.
How to Use:
Start with the #400 grit to reshape or repair, then switch to the #1000 for fine honing. The rolling action ensures even contact, and the 15Β°/20Β° magnetic angle guide locks in perfect geometry for both Western and Japanese-style knives.
Perfect For:
High-carbon and stainless steel knives
Quick reshaping and precision finishing
Pros who want long-lasting sharpening power without water or oil
Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, youβll experience the precision that sets us apart.
Engineered for unmatched sharpness: razor-sharp blades that elevate your culinary experience.
Shimeru Knives feature uniquely designed handles that not only add a sophisticated touch to your kitchen but also provide a comfortable, secure grip for effortless chopping and slicing.

Saleok so i picked this up after my old whetstone finally annoyed me enough. i'm not a pro or anything but i like my knives sharp. this thing is stupid easy to use. the magnets hold the blade at the right angle so you just roll it and the diamond discs do their thing. did a whole set of old knives my wife was ready to toss and now they're slicing tomatoes clean again. the 400 grit side is aggressive but the 1000 polishes it up nice. heavy base doesn't move around which is good. only thing i wish is it had a little carrying case or something but whatever it lives on my counter. happy with it.
i mean it works i guess. for 70 bucks i was expecting something a bit more substantial. the whole thing feels kinda plasticky except for the grinding wheels. it does sharpen knives, the magnets keep things steady and the rolling motion is smooth enough. but the edge it leaves is just ok. decent for daily touch ups but if your knives are really dull it takes forever. the 1000 grit side is supposed to polish but honestly my old 15 dollar ceramic rod gets a sharper edge. i'll keep it cause it's convenient but i wouldn't buy it again at this price.
Got this for my dad for his birthday cuz heβs always complaining his knives are dull and honestly it was a hit. Set it up in like 2 minutes on the counter and he went through his whole block in no time. The magnetic roller is genius keeps everything straight so you dont mess up the angle. He said his old chefs knife hasnt been this sharp since he bought it. I might have to get one for myself now lol.
Really solid sharpener for the money. The diamond discs are no jokeβmy Global knives came out razor sharp after a few passes. Its pretty straightforward to use, no guesswork like with a whetstone. Only thing is I wish the base was a little heavier because it can slide around on the counter if you push too hard. But once you get a feel for the pressure its fine. Def recommend if you want something quick and consistent.
Ive been using this for about a month now and honestly its a game changer. My old whetstone setup was taking forever and I kept messing up the angle. This thing just rolls right across the blade and I can feel it cutting better after just a few passes. The magnetic strip holds it steady on the counter which is nice. Got my dull Shun back to life in like 2 minutes. Definitely worth the money if you have nicer knives.
Overall pretty solid sharpener. The diamond discs do a good job on my Global knives, they came out nice and sharp after a few goes. Only minor thing is I wish the magnetic base was a little stronger, it moves around a bit if I push to hard. But once you get the hang of it it works fine. Good for quick touch ups between proper sharpening sessions.
So I've got a mix of Shun and Wusthof knives that I love but keeping them sharp was always a pain. Tried stones and pull-through sharpeners before and honestly they either took too long or messed up the edge. This magnetic rolling sharpener is so easy to use it's almost stupid. Just set it on the counter, magnet holds the knife perfectly, and roll it through a few times. Took maybe 2 minutes to get my dullest chef knife back to scary sharp. The 400 grit side fixed a little chip I had too. Only had it a week but I'm never going back to stones.
Itβs ok. Does the job on my Chefs knife, got a decent edge after a few passes. But for $70 I was hoping itβd be quicker or sharper out of the box. The #400 side is nice for fixing dull blades, but the #1000 could be finer for finishing. Not bad, just not amazing. Works fine if you dont mind spending a little time.
This sharpener is legit. Iβve been using it on my Japanese knives for a month, and theyβre like razors now. The diamond discs work fastβtook out a chip on my Gyuto in no time. The magnetic rolling part is slick, holds the knife steady while you go through the grits. Build feels solid, not cheap plastic. Best $70 Iβve spent on kitchen gear in a while.
It's okay. Does sharpen the knives, I'll give it that. The rolling mechanism is fine. I guess I just expected more for the price? It feels a bit clunky to me, and changing between the two grit discs is not as quick as I thought it'd be. It gets the job done, my knives are sharper, but I'm not blown away. Probably would have been just as happy with something cheaper.
Ok so I'm not a pro, just a home cook. This made sharpening accessible. I watched a quick video on angle and went to town. The magnets hold the blade at a consistent angle which is the key. My santoku is razor sharp now. It's a clever design that just works.
It's a three-star product for me. Gets the job done. I don't love the plastic housing, makes it feel a bit toy-like even though it's not. The results are good enough for maintaining an edge between professional sharpenings. Wouldn't call it a must-have, but it's useful.
Great results, easy to use. The magnets are strong which is good. I just wish it came with some kind of storage case or stand. Right now it's just sitting in a drawer and I'm worried the diamond rollers might get dinged up. The sharpening itself is top notch though.
Bought this for my dad and he loves it. He said it's much easier than his old whetstone. I tried it myself and it's good. I'd give it five stars if the fine grit was maybe a 2000 or 3000 for a more polished edge. The 1000 leaves a good working edge, just not a mirror finish.
Nice and heavy, feels quality in the hand. The instructions were clear and I had my main knife razor sharp in about five minutes. Very impressed.
Great results, easy to use. I just wish it came with some sort of storage case or cover for the discs, feels a bit exposed to just leave it in the drawer.
Been using it for a few weeks now on my Japanese knives. The build quality is top notch, feels expensive. The results are consistent and my santoku slices through tomatoes like butter again.
It's good, not great. The concept is clever but in practice I find it a bit fiddly to get the blade seated perfectly every time. When it works it's good, but it's not as effortless as I'd hoped.
Arrived next day which was a bonus. Used it on my gyuto and it's honestly like having a new knife. The magnetic hold is really secure, no wobble at all.
Works well, my santoku is lovely and sharp now. The product itself is a bit more industrial looking than I thought from the pictures, but that doesn't affect how it works.
So I was a bit sceptical about a rolling sharpener but this thing is brilliant. My knives are sharper than they've ever been, even the really hard steel ones. The magnets are strong and it feels really solid.
Bought this as a present for my son who's just moved into his own flat. He said it's the best gift he got, his knives are actually usable now.
Cant believe how well this works. I used the 400 grit on an old chef knife that was basically blunt and it brought it right back. The 1000 grit gives it a lovely polish. Really simple to use.
Effective and simple. I've used it on a few different knives now with great results. The handle shape is okay, not the most comfortable for a long sharpening session but for quick jobs it's fine.
So I've been using this for a few weeks now on my main chef's knife and a couple of old ones. Honestly, it's dead easy to use, much simpler than trying to get the angle right on a whetstone. The 400 grit side sorted out a tiny chip in no time, and the 1000 leaves it properly sharp, glides through tomatoes. Came really well packaged too, no complaints.
