Masterfully forged from professional-grade High-Carbon Steel, the Kitakami Collection features individually forged kitchen knives that are built to last so that you never need another kitchen knife set again.
High-Carbon Steel, which was once the metal of choice of Japanese swordsmiths, has been exploding in popularity due to its added hardiness and sharpness, to such a degree that high-carbon steel has become the premier choice of many professional chefs.
Each Kitakami knife is carefully heat-treated and sharpened to perfection for razor-sharp cutting and extreme durability. The knives are etched with a traditional Damascus pattern, paying homage to a style of knife-making whose history stretches back over 1000 years.
The knives boast a 15Β° edge for superior cutting, as compared to a typical 20-25Β° edge found in most Western knives. You WILL feel the difference from the very first cut.
Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, youβll experience the precision that sets us apart.
Engineered for unmatched sharpness: razor-sharp blades that elevate your culinary experience.
Shimeru Knives feature uniquely designed handles that not only add a sophisticated touch to your kitchen but also provide a comfortable, secure grip for effortless chopping and slicing.
With a double-bevel edge sharpened to 15Β° (compared to the standard 20-25Β° of most Western knives), our blades allow for noticeably smoother, faster cuts.

Step 1: Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher; the harsh detergents and jostling will damage the edge and handle.
Step 2: Dry
Towel dry immediately. Don't leave it wet or in the sink; even stainless steel can develop spots if left damp.
Step 3: Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer; it dulls the edge and is a safety hazard.
That's it. No special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use, and with these three steps it'll stay razor-sharp for years.
Every knife comes in its own presentation box, ready to give as a gift.
Ok so I was a little skeptical buying a whole set online but honestly for the price I figured why not. These are way nicer than I thought theyd be. The marble handles look even better in person, kinda like a deep green with swirls, really stands out on my knife strip. I mostly grab the 7 inch santoku and the nakiri for day to day stuff, the nakiri is a beast for prepping veggies, just flies through cabbage and carrots. My husband loves the kiritsuke for slicing brisket and roasts, it just glides. We dont use the bread knife a ton but when we do it handles crusty sourdough without tearing it up. The little petty knife is handy for fruit or quick jobs. Havent touched the boning knife yet but its nice to know its there. Came in a good box too, all snug in foam, no damage. Sharp right out the box which was a nice suprise. For the money this set is ridicuous, if your on the fence just get it.
Ok so I wasn't expecting much for under $200 but this set is actually pretty solid. The green handles look really cool on the counter and they feel nice in the hand. My favorite so far is the Nakiri, it makes chopping veggies so easy, and the bread knife is a beast. The damascus pattern looks nice too. Only had them a few weeks but theyβre holding up well. For the price you get 8 knives, cant beat that.
Got this set for my husband for his birthday and heβs been using them nonstop. He loves the kiritsuke and the filleting knife especially. The set came well packaged and the knives were sharp right out of the box. The green marble handles are pretty unique, they donβt slip when your hands are wet. Honestly Iβm thinking about getting one for myself now lol.
Got this set for my wife birthday, and she loves it. The knives are really sharp out the box and the Damascus pattern is pretty cool lookin. Only thing is the handles are a bit larger than she was used to, but she says they feel good after a couple weeks. Used the santoku for chopping veggies and the bread knife made quick work of a loaf. Good set for the price.
So I bought this set after seein the pictures online. They look nice and they cut fine, but I dunno. For 190 bucks I guess I expected more. The handles are kinda weird looking in person, not as fancy as the pics. The knives are sharp enough but im not blown away or nothin. I use the petty knife most for small stuff. Its a decent set but I probly woulda been just as happy with a cheaper one.
Really nice set overall, the Damascus pattern on them is gorgeous and they came super sharp out of the box. I've been using the santoku for pretty much everything, veggies, chicken, you name it and it just glides through. My only minor gripe is the handles are a bit chunkier than I'm used to, took me a few days to get the grip right but now I actually kinda like it. For the price you get a lot of knives that cover all the basics, would definitely recommend
Got this as a housewarming gift for myself and I'm pretty happy with it. The bread knife is a beast, cuts through crusty sourdough like it's nothing. The smaller petty knife gets used a ton too for like garlic and herbs. Only thing is the nakiri feels a little heavy compared to what I expected for a vegetable knife, but it still chops fine. Wish they had a slightly bigger version of the kiritsuke but thats just me being picky. Great set for the money though
These knives are seriously sharp out of the box. I was a little intimidated at first lol. The damascus pattern is really cool looking, and the handles dont feel slippery even when my hands are wet. I use a different one almost every time I cook, the petty knife is perfect for small stuff like garlic. Great value for a whole set.
I cant believe how nice this set is. The weight of the knives is perfect, not too heavy. I use the 5 inch santoku almost daily for lunch prep. Having all the different types means I'm not trying to use one knife for everything anymore. The edge is holding up great so far after a few weeks of regular use.
Ok so I've been using these for about a month now. The 7 inch santoku is my go-to for pretty much everything, it just feels right in the hand. The whole set covers all my bases, I used the boning knife on a pork shoulder last weekend and it was way easier than I thought it'd be. Massive upgrade from the cheap block set I had before.
So I got this set as a housewarming gift for my sister and she is obsessed. The handles are gorgeous in person, like a green marble. She says the nakiri is her favorite for all the veggies and the bread knife is actually sharp, not like those saws that just crush everything. Came in a nice box too, looked really fancy.
The knives arrived quickly and were packed well. The set is perfect for my home kitchen, I don't need anything else. The blades are thin and cut through things effortlessly. The green handles are a nice pop of color.
Ok so I cook a lot and these knives have made prep so much faster. The set is really comprehensive. The bread knife slices through crusty loaves like butter and the petty knife is my go-to for peeling and coring. They feel solid and well made.
These knives are a massive upgrade from my old department store set. The edge retention is noticeably better. I love having a specific knife for each task, the set layout makes sense. The 8 inch chef knife is a workhorse.
Bought these as a housewarming gift for my brother and he loves them. He said they're super sharp. His only comment was that he wished the bread knife had a slightly more aggressive serration, but he says it still works perfectly fine. The set looks very impressive.
This knife has become my go-to in the kitchen
Iβve been using this knife daily, and itβs held up remarkably well. Itβs sharp, easy to handle, and a pleasure to use.
Itβs functional, but the quality doesnβt justify the price.
My knife was delivered quickly, and itβs easily the best kitchen tool Iβve ever owned.
It gets the job done, but Iβve used better knives at a lower price.
A beautiful knife that performs as well as it looks
